Ingredients

    1 head cauliflower cut into florets with no thick stems
    1.75 cups chicken broth
    1/4 cup chopped scallions
    2 oz cream cheese
    1/2 cup cheddar cheese
    2 Tbsp butter
    2 Tbsp sour cream
    pepper to taste

Directions

Cut cauliflower into florets with very little hard stems. Place cauliflower into large sauce pan with chicken broth and bring to a boil. Cover and cook on high heat for approx. 12 minutes or until all chicken broth has evaporated and cauliflower begins to brown. While cauliflower is cooking, put all remaining ingredients into the food processor. Drain cauliflower making sure that all excess moisture is gone (placing back in hot pan over heat for a couple of minutes to get excess moisture out if need be). Put hot cauliflower directly into food processor and mix all ingredients until well blended into a thick & creamy texture. Serve immediately or reheat for 30 seconds to 1 minute in the microwave before serving.
