Introduction

Adapted from the Applesauce Oatmeal Muffins found on Sparkrecipes. These have a great cinnamon and apple flavor throughout the muffin. Also, buckwheat and flax makes this recipe healthier. Ingredients

    1 cup quick oats (or old fashioned)
    1 cup skim milk
    1/2 cup unsweetened applesauce
    1 medium apple
    2 egg whites
    2 teaspoons milled flax seed
    1 cup buckwheat flour
    1/2 cup brown sugar
    1 teaspoon cinnamon
    1 teaspoon baking powder
    1/2 teaspoon baking soda
    1/2 teaspoon salt
    1/2 teaspoon cinnamon
    1/2 teaspoon sugar

Directions

1. Combine the oats and milk and set aside for 15 minutes. (If you're using old fashioned oats, let them soak for 1 hour.)
2. Preheat the oven to 400 degrees.
3. Fill a muffin tin with 12 baking cups, and lightly spray with non-stick spray.
4. Sift together the flax seed, flour, brown sugar, baking powder, baking soda, salt and cinnamon.
5. Grate the apple and using a tea towel or cheese cloth, and squeeze out all the juice.
6. Combine the oat mixture, grated apple, applesauce and egg whites.
7. Combine dry ingredients with wet ingredients, mixing until just combined.
8. Evenly divide the batter into the 12 baking cups.
10. Combine the 1/2 teaspoon cinnamon and 1/2 teaspoon sugar. Sprinkle over the top of the muffins.
11. Bake for 20-25 minutes.
12. Remove from pan and cool.

(You may add nuts or dried fruits, such as raisins or craisins.)

    Instead of applesauce and apples I put 1/4 cup of maple syrup and blueberries. yummy. - 5/30/14
