Ingredients

1/3 c tahini
2 c chickpeas
1 glove garlic, crushed
about 1/3 cup lemon juice
about 1/3 cup water
1.5 t baking powder, dividing
Directions
Soak chickpeas overnight in water three times their volume with 1 teaspoon baking powder.
Rinse chickpeas with cold water. Put in a pan and cover with cool water and 1/2 teaspoon baking powder.
Heat the chickpeas to a boil before reducing to a simmer for 30-45 minutes, stirring occasionally and removing excess foam. They should be very soft when finished (test by squeezing one between your fingers).
Let chickpeas cool.
Place chickpeas, tahini, and garlic in food processor. Puree until smooth and lighter in color. Add water and lemon juice, alternating, until desired consistency (the measurements are approximate). Hummus will thicken a bit in the fridge.
Enjoy with apples, veggies, pita, or bread! A serving is about two tablespoons, assuming your hummus ended up about 3 cups.
