Introduction
If you love sinach dip but want a healthier version, this is going to be a hit with you. Instead of substituting for funny tasting fat-free versions of mayonnaise or sour cream and such, which personally taste like nothing I'll ever put in my mouth (nothign tastes worse than fake food!), I use ingredients that are already naturally low in fat - yougurt, and cottage cheese, so it tastes REAL, and still surprisingly creamy. This is a spinach dip so healthy you could eat it as a main course with no guilt! If you love sinach dip but want a healthier version, this is going to be a hit with you. Ingredients

1 cup low fat cottage cheese (recipe uses 2%, you can use any)
1 cup plain yogurt
aprx 1/4 cup fresh finely grated parmesean (loosely piled) or to taste
1 bunch spinach, stems removed, chopped and steamed (or more if you like spinach!)
aprx 2 tablespoons each of:
Finely chopped red onion
finely chopped canned straw mushrooms
finely chopped water chestnuts
1 clove chopped or pressed garlic (or more, to taste)
1 tsp ground white or black pepper (to taste)
Directions
Chop spinach and start it steaming while prepping other ingredients. Cut it relatively fine - aprx 1 cm X 1 inch wide strips work for me. Steam until just wilted. When done steaming, remove from heat and let cool and drain.
With a hand blender (or real blender) mix together the yogurt, cottage cheese, Parmesan, garlic and pepper. Blend until smooth.
Chop the onion, mushrooms and water chestnuts, and stir into the blended mixture. Press the spinach between clean paper towels to remove as much excess water as possible, then stir thoroughly into the mix. Taste, add spices as desired, and serve!
