Ingredients

1 Cup of DHC Multi Grain Rice, prepared
20 oz Shrimp
200 grams fresh mushrooms, sliced
3 green onions, sliced
1 cup carrots, chopped
1 pckge frozen broccoli, cooked
1 Cup corn
200 Grams very lean ham, minced
2 large eggs
1/4 cup soy sauce
1 Tblsn Sesame Oil
Using a non stick skillet saute onions, mushrooms, and carrots until tender and mushrooms are brown. In another small skillet, cook eggs and chop up. Once vegetables are tender, add Sesame oil. Add rice, shrimp, and broccoli and heat through. Right before serving, stir in soy sauce and egg.
Directions
In a non stick skillet, cook ham until almost crispy. Add carrots, onions, and mushrooms. Cook Broccoli and corn in microwave and keep to the side. Scramble egg and cook in separate small skillet.
After vegetables are soft, add shrimp and cook until pink. Then add corn and rice. Combine thoroughly and then add the soy sauce and sesame oil. Then fold in the egg and broccoli. Heat for a few minutes and then serve.
Makes 11 one cup servings.
