Introduction
SOOOO good if you are wanting a creamy enchilada without all the fat and calories. Really hits the spot for me when i'm craving mexican Only 270 Calories and about 6 fat. Ingredients

2 cups shredded chicken
5 oz chopped frozen spinach
8 oz container fat free sour cream
1/4 cup plain fat free yogurt
2 T flour
1/4 t ground cumin
1/4 t salt
1/2 Cup fat free skim milk
4 oz can green chiles
6 (6-7inch) tortillas ( I use whole wheat and is what is in calculator)
Directions
Combine drained spinach and chicken in one bowl.
In another bowl, combine sour cream, yogurt, flour, cumin and salt. Gradually add milk and stir...then add green chiles.
Combine 1/2 the sour cream mixture with chicken mixtuere. Divide and place on the tortillas and roll up. place tortillas seam side down in an ungreased baking dish.
spoon remaining sauce over tortillas. Bake uncovered 20-25 minutes in a 350 oven. Let stand a few minutes and garninsh with tomatoes, cilantro or whatever :)
