Directions

This makes TWO pies! (Total of 12 servings)

Preheat oven to 450, prick bottoms of pie crusts lightly with a fork (like 3 times)
Bake crusts for about 4 or 5 minutes
Mix together egg beaters, half & half, spinach (make sure its drained) and cheeses
Spice to taste, I used basil and garlic with some salt
Pour mixture into pie crusts, lower oven temp to 350 and bake for 50 minutes or until firm (if you stick a knife in it, it should come out clean like with a cake) :) Enjoy!
