Introduction

Un-sugared banana oatmeal muffins. Add honey directly to the muffins after if you want it to be sweet.

I've found the finished muffins are also good with a brown deli mustard.

Ingredients

    1 Cup of whole wheat flour
    1 Cup Soy Milk
    2 eggs equivalent of egg whites
    2 Bananas mashed but still chunky
    3/4 cup oatmeal
    1 tbs butter
    2 tsp baking powder
    .5 tsp baking soda

Directions

Mix and bake. Add the baking powder and soda last.

Spray some non-stick on the muffin tin.

Bake at 350 for 30 Minutes
