This is a wonderful summer time dish, very colorful and tasteful. This is a wonderful summer time dish, very colorful and tasteful.

Ingredients

    1 Package of mexican cornbread -prepared and crumbled
    1 can pinto beans, drained
    1 can sweet yellow corn, drained
    3/ 4 cup chopped red bell pepper
    3/ 4 cup chopped green onion
    2 tomatoes, diced
    8 strips precooked bacon, cooked and crumbled
    1 cup ranch dressing
    1 cup shredded cheddar cheese

Directions

layer 1/2 of cornbread, beans, corn, tomatoes, onions, peppers, bacon ranch and cheese. Repeat layers. Best on day 2 once flavors blend.
