This is a great protein for breakfast. Good Mediterranean flavor, too. Adding a touch of half and half to the egg whites really makes you not miss the egg yolks. If you want to reduce fat, change the cheese to skim ricotta. I usually have this for breakfast with some fruit on the side or even some oatmeal. It's even good as an afternoon snack.

It's based on an oatmeal recipe by Greg Avedon (I tihnk) published in Men's Health. I tweaked it to give more protein and fewer carbs, as well as the fact that I have to stay away from yogurt. After eating this you'll have a full and satisfying breakfast as it gives you a healthy portion of carbs when you need them the most - early!
