Make ahead tip: Wrap any leftovers individually in plastic wrap and refrigerate for up to 2 days or freeze for up to 1 month. Reheat in a toaster or toaster oven.
I tweaked this recipe from a recipe I found on All Recipes.com. I couldn't find Spelt bran in the SparkPeople ingredients lists, so I substituted wheat bran in my ingredients list above. I originally used Spelt Bran. I don't believe that wheat bran would make that much of a difference in the outcome of the muffins.
Feel free to substitute 1/2 cup of applesauce with a 1/2 cup of oil for the 1 cup of oil.

I did make some adjustments to the salt amount as I found that the pancakes turned out just fine with half the amount of salt called for in the original recipe.
This recipe needs to sit before making. It will be very liquidy initially, but will thicken gradually. I usually use less water and then adjust to the proper consistancy as it sets.
Forget having to make just a few pieces of French toast at a time. With this French toast bake, you just mix it, bake it and, when it comes out of the oven, all it needs is a drizzle of warmed syrup and everybody gets to eat together!

This recipe can be tweaked in a number of ways depending on your preferences... use different nut or seed combinations (sometimes I add hemp seeds or hemp protein to up the protein factor) or play with the types and amounts of sweeteners you use if you want to adjust or lower the overall fat/sugar content...
