Eating parsely may sound weird but this omelet is good and parsley has inflamation fighting ingredients.
I had some leftover quinoa and sweet potatoes, so I decided to make some muffins. They turned out pretty good, especially for 'leftover' muffins.
Cook egg with Pam in a non-stick pan or in the microwave.
Toast the sandwich thins.
Add the laughing cow cheese to both sandwich thins.
Microwave the turkey bacon for 2 min. (or your preference). Divide the bacon slice into two pieces.
Add the cooked egg and both pieces of the turkey bacon slice to the sandwich thins.

Tasty and nutritious! Yields a crepe-like pancake. Substituted 1/4 C. Egg Beater for 1 egg and honey for agave nectar. May use rice milk in place of soy milk.
