Yummy breakfast or anytime meal. I was challenging myself to find ways to get more vegetables into my diet and less simple carbohydrates. I also was having trouble getting enough fats into my diet, so if you want to make low fat, just use cooking spray in place of the olive oil and Smart Balance.
