Salad in a quart jar
This recipe is my version of one that was in a Good Housekeeping magazine.

I took this recipe from the Xpress Redi Set Go recipe booklet, and changed it to make it half Whole wheat. Makes 12 servings.
A nice meal in a bowl. Rinsing and draining the kidney beans should reduce the sodium per serving. Using reduced sodium bouillon would also improve the sodium numbers.
Lentils are tasty and filling. High in fiber and protein. They are quickly becoming one of my favorite foods.
My newest favorite! Incredibly flavorful salad in a pita, and it is high in heart healthy monounsaturated fats.
You can use light/low sodium italian dressing which lowers the calorie, fat and salt.
