I buy a chili mix made of Texturized Vegetable Protein with Chili Seasonings already added from my local natural foods store.
Instead of that, I've also used plain texturized vegetable protein (TVP), about 0.6 lb., and added my own spices - cayenne pepper, onions, carrots, tomatoes, chili beans, salt & pepper or some combination of what's in my garden. Your favorite chili spice mixture would work too.
