This potato salad has been lightened up by using light mayo and more egg whites than yolks. Gets raves!
Using a food processor allows this to become so thick and creamy that using only a 1Tbl on a cracker or tomato slice easily can become the basis of a lunch or snack. 2 Tablespoons used the same way becomes a full lunch with veggie and fruit on the side

I use the Biggest Loser "Main Event Marinara Sauce" from the family cookbook but any lowfat sauce will work well. (I also have the sauce recipe on the site)
This is a good lunch pizza. You can add a little olive oil to the pita first, or 1 tbsp of fat free ranch...or leave it as it is. Very good lunch.
