These unbaked cookies are soft, chewy and easy. They are also Gluten Free and Casein Free! My recipe uses soy milk and lactose free margarine, you can use regular milk and margarine if you tolerate dairy. Be sure to verify your oats are GF status.

Adapted from recipe at the PPK. These are the best vegan pancakes I've ever found. I made them a little healthier and lower in fat by replacing oil with applesauce and adding whole wheat flour, flax seeds and fruit.

Good snack for kids, portable, not too messy, and you know exactly what's in them, unlike store bought granola bars. This is really easy to adapt by changing the nuts and fruits and spices you add. Could also use other extracts besides vanilla.
