This is great if you are watching your cholesterol OR if you don't eat eggs because you are vegan like me. If you really want that egg like taste you can try using "black salt". It is a dark color and it has a sulfur taste to it that tastes like eggs. If not it is good with out it as well.
I made this recipe and my mother HATES tofu. She liked it because it's a LOT like egg salad. I just spread 1/4 cup on some wheat bread with some lettuce and enjoy!

I adapted this recipe from Cuisine at Home. I used 1% milk and fat free cheese in place of whole milk and full fat cheese. I really like the butter in the recipe, so didn't change that, but for those looking for less saturated fat, could probably substitute oil
Very good soup with crusty bread on a cold day. Easy to make and keeps fairly well. I use Fit & Active (Aldi brand) chicken broth reduced sodium for the liquid. Have canned it in the past and has stood up well.
This is a recipe from "Gourmet" with the onions left out and some additional spicing added. I found this recipe surprisingly easy, and MUCH tastier than the canned soups I had been having! Great on a cold winter night or for a light lunch at work!
