I've never made traditional stuffed peppers before. This is an adaptation of my husband's mother's stuffed pepper recipe. I chose to use bison because it's leaner and has better nutrients. And Rotel tomatoes for some spice.

Best if made in a traditional, metal, julep cup and served with cut, bent straws for sipping. For a truly frothy julep, stick in the freezer for a couple of minutes before serving.
