Light yet hardy! A person could probably cut more fat out by using another pasta or fat free dressing. I just whipped this up with what I had in the house. Might be fun to experiment with various veggies.
A long-time family favorite. I guess you could classify this as a Jello Salad, but we've always just called it "Pink Stuff". There are tons of variations on this as well (Included as a note).

A great substitute for canned cream soups
Add mushrooms for cream of mushroom soup, peas for cream of peas or even spinach. I like it just as it is or add vegetables or meat as you llike.

I had a tasty Butternut squash soup at a fancy pants restaurant. After a few tries, I got it right and healthy! This was served in the restaurant with a drizzle of vanilla and ginger flavored cream and candied pecans. At home I eat it with warm crusty french bread. Some stores sell the squash pre peeled and cubed!

This is such a quick and easy bread to make. It does not make big loaves but rather delicious, dense loaves.
My variation of the recipe from Anne Lindsay's "New Light Cooking". I halved the recipe and made a few changes.
One difference, I used whole wheat bread cut into four equal pieces instead of ciabatta bread.
This quick and easy taco soup lends itself well if you are looking for homemade taste without the hassle of cutting and chopping. It is very high in Fiber and low in calories with just 3 WW point per serving. You can put it together in a snap.
Slice cucumbers very thin. Slice onions thin, they are optional. Soak cucumbers in cider vinegar just barely cover them. Soak for at least 1 hour. They longer they soak the stronger the flavor. Drain. Add a couple of dollops of plain yogurt or sour cream until they are at desired consistency. Keep refrigerated. ENJOY!
