I love Spanish chorizo! It packs a lot of flavor, and it is a bit spicy, which I like. I also use Jalapenos instead of Green pepper (without the seeds) to give the omelette an extra spicy kick. Yum!
Miniature open faced sandwiches using one reduced fat Triscuit as the base. This is one of my favorite meals for lunch.
Cut tempeh into 1 inch cubes and brown with olive oil and cilantro. Chop celery into small pieces, then combine with tuna, mayonnaise and horseradish sauce in a bowl. Add ground black pepper to taste. When tempeh is browned, let it cool and add it to tuna salad.

The longest part of this recipe is browning the ground turkey (which is different than the original recipe which called for 2 lbs of ground beef), followed closely by trying to figure out where my kids hid the can opener. If served as 10 servings each is 173.7 calories; if served as 12, the caloric count drops to 144.8.
This is a crock pot recipe that has made my life so easy. Just throw in the ingredients and turn it on. Go to work, come home and it's ready.
YUMMY! My daughter who hates onions and just about everything else, LOVES this soup. This is great for those that are lactose intollerant also, so yummy and creamy.
Place all ingredients in blender. Add ice (3 cups) and continue blending. It should be a smooth texture. If the blender you are using is not strong enough, put through a sieve before serving. Serve chilled.
