A healthy and delicious bean dip that can be served as an appetizer, or used as an alternative to hummus in sandwiches and wraps!
This soup is very simple to make, the hardest part is peeling the squash.
A spin-off of regular potato salad. This is made with steamed cauliflower instead of potatoes.
Use leftover chicken and roasted vegetables. For extra creamy mouth feel, mix 1/4 cup flour with cold water and then stir into hot soup.

My version of tortilla soup is meat free and low in fat and calories. I keep it healthy by topping it with avocado, lime juice and broiled tortilla strips. This is delicious when paired with garbanzo bean tacos or whatever your favorite burrittos or tacos may be. You can easily add black beans and cheese to this and make it a complete meal by itself.
Get a full days veggies in a bowl of soup that is delicious and will please a crowd of people. Goes great with a hard roll since you will be cutting calories with the soup.
Threw this in the crockpot for my mom, brother, and sister for a hearty breakfast before school and work.
