From years of living well in France, this and a good baguette are what I miss most. Many people think mixing the oil with the flavors emulsifies them, but they are mistaken. vinegar is and emulsifier. Mix flavors with it first then whisk in the oil to reduce separation.
Serving this with 2 slices of buttered whole grain toast guarantees a delicious vegetarian meal
This is a great dip to serve with apples or pears. (I have mixed the two together for some variation). I make this when the family comes over. Everything is made the night before so its a huge time saver and everyone (kids included) loves it.
This recipe was given to my grandmother from the American Cancer Society when she was diagnosed with colon cancer. This is the only dressing I have used since 1997. I have a friend who adds a bit of honey and uses regular mustard for a honey mustard dressing. The nutritional values will change.
