I'm not usually a fan of gazpacho, because the blended kind sometimes looks decidedly khaki. This one is a colorful exception, with clear, bright tastes. I think peppers are vastly improved when peeled, so use a vegetable peeler before coring.
An unusual but more-ish salad, nice as a side dish with cold meat but also good as part of a mixed sallad plate - I like it with tomatoes, chick peas and black olives.
Slice sausage, brown in olive oil. Add finely chopped celery, onion and garlic. Cook until tender. Add broth, 2 cups water and rice. Bring to a boil and reduce heat. Cover and simmer for 15 minutes.
Add beans, tomatoes, zucchini, and spinach. Season with 1/4 cup snipped fresh thyme and pepper. Cook and stir until zucchini is tender. Top each serving with feta cheese.
This white chili recipe was given to me by my roommate. It also got an honorable mention at a chili cook-off!
