A lightened version of Ina Garten, The Barefoot Contessa, recipe. Its DELICIOIUS!
cook potatoes in water with chicken oxo cube saute leeks add to pot puree add rest of ingredients cook til done
1 lb bacon
1 med onion cut in thin slices
2-3 cloves garlic diced fine
2 1 lb.12oz can diced tomatoes
2 c. water
2 c white cooking wine
2 c raw cubed potatoes
1 tsp. paprika
2 tsp. basil
2 tsp. thyme
1 tsp. salt
2 lbs fresh fish
parsley flakes

I use a combination of butternut and buttercup squash. Although I roasted the squash, you can make the soup by placing cut and cleaned halves into a pot of water to cook until soft.

Cut chicken into bite sized pieces. Add to pot with : chicken broth, 6 cups of water, chopped carrots [about 4], onion or onion powder, celery, parsley, garlic powder, pepper. Bring to boil and cook till chicken is done.
Mix in bowl: egg whites, cottage cheese,bit of water, salt & flour. Crumble noodles and add to pot. Bring to boil. Drop in dumplings, and keep covered. Simmer for about 15 minutes.
