Chicken and Veggie Stir-Fry

This is basically Lettuce wraps without having to deal with the wraps. Use the cabbage instead!
This soup doesn't require any real cooking (just boiling water) and is easy to modify to suit your tastes or what's in your cupboard. If you don't have any fresh stock on hand use prepared stock, a bouillon cube, or stock concentrate (this is what I prefer). If you are vegetarian, substitute vegetable broth. Add more or less curry paste dependeng on how hot you like your soup. Add any fresh herbs you have on hand--I like a few basil leaves and am thinking of trying it with corriander (cilantro).
