Makes a large batch that you can mix up and it will keep up to a month in the refrigerator. Bake as many or as few as you want at any time. I love this recipe because I can have fresh muffins in 15 minutes.
I use genepro protein on top of the premier vanilla protein shake (my liquid) as I need to have 30 G of protein in every meal. The amount of protein in genepro is controversial, so I count a scoop at 15, rather than 30, so the actual protein I count in this is 28.7g. Work with your nutritionist or doctor to determine what would work for you.
I make this on Sunday afternoons and divide into Tupperware-style containers to take with me to work. Reheats well in the microwave.
This is an adaptation of my favorite bran muffin recipe. Using blueberries instead of raisins boosts the anti-oxidant power of these muffins, and swapping out the oil for applesauce cuts the fat to almost nothing!
