This tasty bake is high in calcium and iron as well as fat free protein!
This is my favorite recipe for bran muffins. I often buy several pears, let them ripen on the counter, and freeze the pear-mash in 2c amounts. Then it's easier to whip up a batch of muffins.

slice cucumber into 8 slices - 2 each
chop theshrimp and tomatoe
combine Waldens, shrimp, tomatoes
spoon equally onto the 8 slices of cucumber
I even cut them in 1/4 pieces - and each person really feels lke they had an appetzer
season to taste - I put the pepper/garlic grinder on the table
Bake 350 degrees for 14 mins. for muffins and 45 mins for a cake or bread.

This recipe feeds one very hungry person on a high protein diet, or two normal people. Double the recipe and bake in a cake pan to feed a family of 4.
I use 1/4 cup to measure out my pancakes. This recipe makes 6 pancakes. Double if you need more. I place the blueberries, on the pancakes after I pour the batter into the pan, that way you don't have a lot of berries in one spot.
This is a drink I use for a meal replacement or an on the go meal when I don't have time to sit and eat.
Tasty and nutritious! Yields a crepe-like pancake. Substituted 1/4 C. Egg Beater for 1 egg and honey for agave nectar. May use rice milk in place of soy milk.
