You can do a bunch of subsitution to make give these waffles a bit more punch. I'm sure that you can convert these to pancakes wit more liquid, but I haven't gotten around to making it that way as yet.

Preheat oven to 350. Grease and lightly flour 12 muffin cups. Whisk milk, eggs, flour, salt and pepper in medium bowl. Stir in cheese, broccoli, and bell pepper. Spoon 1/4 to 1/3 of mixture into each cup. Bake 23-28 minutes, or until knife inserted in center comes out clean. Cool in pan for 15 minutes. Run knife or small spatula around inside edges of cups. Carefully remove quiches and serve.
