This recipe is amazing! light, fluffy, and perfectly sweet! It does have a lot of fruit in it. If you prefer more "bread" in your muffins, I would suggest cutting the fruit down by 1/4 cup each. Personally, I love them with the extra fruit.
Over the years I have made this recipe. I pre-cut and freeze ziplock bags with 1/2 banana, 2 stawberries and a handful of Blueberries.
These cornmeal pancakes smell like popcorn while they are baking and have a delicious crunch. In order to make it healthier I put old fashion oats in a blender and used it instead of wheat flour. I use 1 cup oat flour. I make sour milk putting a cup of soy milk with a tablespoon of vinegar.
For those mornings where breakfast won't hapoen. Get a little protein and fiber on-the-go! BTW - because the shake tastes sweet, swap out caff coffee for decaf or half-caff to enjoy a hot snack in the evening!
