I re-worked a recipe I had to be lower in fat and more diabetic friendly for my husband. This is not a really sweet bread.
This is my attempt at a fruity chicken salad, it was close, but did not quite hit the mark.
Excellent with fat free English Crumpets, cucumbers and tomatoes!
You can make it more low fat by using non fat sour cream and/or cream cheese or blend in some cottage cheese.
I adapted this from Pillsbury.com for less fat and lack of crescents. :)

I use homemade chicken broth that is sodium free. In this recipe I substituted bouillon and I would use half regular and half sodium free because there is no salt required in recipe. This would be good with a little shredded cheese served on top, too.
For a quick lunch, make this chicken wrap using leftover chicken you have shredded. Maybe have two of them.
Recipe from Donalie, cut in half, and substitute Brown Sugar Splenda. Put in little crockpot at night on low and is ready in morning.
Beautiful ring of colour, great for any special occasion. Some prep time required.
