Introduction

Delicious fritatta with Spinach, Feta, Red Onion and Dill Delicious fritatta with Spinach, Feta, Red Onion and Dill
Number of Servings: 2

Ingredients

    2 Cups Spinach
    2 Tablespoons Feta
    1/4 cup thin sliced Red Onion
    3 Large Eggs
    Dash of Dill
    Kosher Salt to taste

Directions

Put 1/2 tbsp of Olive Oil in a small, oven safe skillet, heat on med low. Saute onions for 2 minutes, add Spinach on same heat. When spinach starts to cook down add eggs and 2 tbsp feta. Stir gently. Sprinkle dill and kosher salt on top. Cook on stove for 2 minutes.

Turn broiler on High on oven, place in center rack and cook for 5 minutes. When top is light gold brown and eggs are coming away from sides it's ready.
