    12 oz pkg wide egg noodles
    3 cups lite sour cream
    2 cups 1% fat small curd cottage cheese
    2 ox pkgs cream cheese 1/3 less fat
    6 oz unsweetened apple sauce
    4 eggs
    8 egg whites
    1/2 cup granulated splenda
    cooking spray
    3/4 cup Kellogs Special K High protein cereal or any cereal you like
    2 tsp vanilla extract
    1 tsp ground cinnamon

Decrease sugar to 1/3 cup if you like it less sweet.


set oven at 350 degrees
spray 9 x 13 inch baking dish
boil large pot of lightly salted water. Add noodles and cook 8 minutes. should be al dent. drain noodles and return to pot
combine sour cream, cottage cheese, cream cheese,applesauce and cinnamon in a bowl and mix thoroughly. Pour into noodles
in another bowl combine eggs, egg whites, splenda and vanilla and whisk together. pour into noodle mixture and mix well.
Crush the Kellogs special K into crumbs
transfer to baking dish, sprinkle crumbled ceral over the top, bake 50 minutes or until pudding is set. Let set 5 minutes before cutting into squares.

Serving Size: makes 16 4 inch square servings 168 calories
