Ingredients

1 Cup Sweet Potato
1/4 Cup Fat Free Half and Half
1/2 Cup Water
1 Tbsp Curry Powder
1 Tbsp Greek Yogurt
Dash Onion Powder, chili powder and salt and pepper.
Directions
Dice Sweet Potato
Place Sweet Potato, Water and Half & Half in a medium sauce pan. Add Curry and other spices. Bring to a boil. Simmer for 10 -15 minutes depending on how big your pieces of sweet potato are. Using a wisk, frequently stir mixture together breaking apart pieces of sweet potato.
I like my mine chunky so once it is fairly 'mushed' I pour it in a bowl and top with a tbsp of greek yogurt and maybe some fresh cilantro if I have some. If you want a smoother soup, put it in a food processor for a few minutes. You may need to add some water to get the desired consistancy.
This makes a hot curry, if you want less heat omit the chili powder and reduce the curry to 1/2 Tbsp.
