Great for Brunches...Could be made Healthier by removing some of the egg yokes or even switching to egg beaters...but it won't be as fluffy. This is a company brunch recipe...When I make this for my family I leave the meat out and add more veggies making it much more healthy.
Needed a pancake recipe because I can't give them up even with diabetes. Added some fiber and protein and the superfood, blueberries, and they are yummy. You can add water until you get the consistency you like. I like medium thick pancakes.
