French Toast Roll-Ups
If someone told me I had to choose three things to eat exclusively, they would be: french fries, french toast sticks, and the McGriddle from McDonald’s.
I realize you may never read another one of my food posts again after that proclamation but it is the truth. With that being said, I decided to come up with a way to make french toast sticks without actually deep frying my breakfast.
So I came up with a french toast roll-up. Here are the steps to take for this hand-held delicious breakfast (or any meal of the day)
Flavor of peanut butter in a delicious cookie. Great with a cup of coffee. This recipe uses no flour, butter. or milk.
Easy to make. Sort of a sugar type cookie. It has no eggs or shortening because the mayonnaise substitues for it instead. Delicious..

A traditional New Mexican food around winter time. Good for you and not too bad on calories. It isn't hard to make, but does take some time, but will last a while. Spice it up with chili and add some squeeze lime or lemon for more flavor.
My mom makes these Cathedral Cookies each year around Christmas time. I don't know where she got her original recipe so I found a similar recipe online and adapted to our needs. We used Ghirardelli chocolate baking chips (instead of regular semi-sweet chocolate chips) and pecan cookie pieces (in place of chopped walnuts). Now I can enjoy them as part of my meal plan and my type 1 diabetic son can also enjoy these because we now have the nutrition, serving, and carbohydrate factor information! Happy Holidays!
I'm taking a traditional recipe and cutting some excess calories. I'm using a sugar free frosting and a diet soda to make the cake.
