My picky eaters beg for this meal! I'm not sure how we started calling it "meatloaf" though. It is adapted from a recipe in Men's Health. The oatmeal in it makes it super filling!
Please note, recipe for marinade only. Will marinate up to 6 large chicken breasts.
This is something my mom started making a few years back, and really is great as a fajita or if you want to cut out the tortilla, then makes a great salad. Even better if you're camping somewhere and someone thought to bring chips and queso dip too lol....
A vegetarian chili recipe that really explores all the fresh colors lurking in the fridge. Good for getting rid of portions of veggies that didn't quite make it into other meals. Can be made in large batches and frozen into individual or family portions. Reduced or no-sodium-added broth can be used to substitute standard vegetable broth.

Great for summer! To get rid of a few calories, cut down on the canola oil by half and use splenda-- it's still good!

Green smoothies are PACKED with nutrients and this one for sure does! Add the coconut cream because the vitamin A, D, E & K is fat soluble so your body has to have the food combined with a fat when consuming for your body to absorb the nutrient. Because of the high fruit content, the spinach and carrots can't be tasted but you still get their vitamins!
I LOVE this smoothie. It's so rich and creamy and has the texture of the best ice cream - without dairy! This smoothie is like eating 5 servings of fruits and veggies and it's delicious to boot! You can't even taste the veggies - I promise!

Whole wheat noodles and cutting the fat by subbing some skim milk yogurt for mayo helps make macaroni salad a little healthier. Happy bbq's to u and it's!

Shredded colby and monterey jack cheeses
Salt and pepper to taste
Very simple, classic, and CHEAP side dish! I like that the vinegar flavor does not stand out, but it keeps the dish fresh for a long time!
