You could use any type of fruit in this.
I usually serve this when we have something simple like soup for dinner.
I threw this together to get rid of some leftovers.The squash's texture imitates coconut. If you want a sweeter pie, you can increase the regular sugar to 1/2 c. I like to use margarine for the crust because it's easier to work with but butter is best in the pie itself for the taste.
Based on Emeril's recipe but with some of my own modifications, mostly based on what I keep in the house and personal preference.
A friend shared this recipe. It sounded absolutely wonderful to me so I have it in the oven right now! Recipe should make 10, 1/2 cup servings. I calculated the recipe using sugar, as always substituting with lower calorie items will produce healthier less calorie dense recipes but I wanted to post with the worse case calorie count and you can know your recipe is equal to or lower in calories than the one posted.

A snap to make, delicious and crisp oatmeal crumble over warm, soft apple slices. Microwave the apples to save time but crisp up the topping under the broiler to get a baked apple taste! Delicious and fast.

I came across this recipe when my father whimsically stated 'why do they have lemon pie and line pie, but not orange pie?' - as it turns out, there is such a thing and it will now be a holiday standard in my house. It is a light, fresh pie that is easy to whip up and is more healthy than some of the typical holiday pies. I hope you enjoy it.
