This is a lighter version of a favorite occasional munchie. For an even healthier version, skip the chocolate and add chopped dried fruit. We love dried cherries and cranberries.
Instead of a traditional crust, this one combines wholegrain oats, chopped nuts, brown sugar, and butter providing a toasty rich taste and delightfully crunchy texture. Recipe is based mostly on an old Quaker Oats recipe booklet
Using Spice Cake mix and adding applesauce. a dollip ofCool Whip with a little cinnamon on top makes a great addition.
A big hit at church suppers, especially served warm so the chocolate chips are slightly melted. All chocolate is better than half butterscotch, but this is a variation. No frosting needed. Many variations of this cake may be made without chips, i.e. serve plain or with ice cream: pierce baked cake then saturate with flavored Jello and refrigerate: mix 1/2 C cocoa powder with 1/2 batter and marbleize white batter with chocolate: frost with white or chocolate glaze--be creative.
Replaced oil with applesauce and added crushed brownies to Betty Crocker Fudge Brownie mix. Healthier and still very yummy.
