This eggnog can be made with or without Chia seeds. I like the "tapioca" quality the Chia seeds add, but the eggnog is great without them too!
It's a meal in a cup, packed with protein, calcium and vitamins. This is one of the few things that I can tolerate when having morning sickness, and while it's not exactly low in calories, it gives a burst of energy, settles the stomach with a hint of ginger, and can be made lower-calorie by replacing honey with Splenda, or just using a very ripe banana to achieve a bit more sweetness.
