This is my families recipie (made for my 3 kids and my husband as I am keto/gluten free) that we just created, a little back story, I am on a modified gluten free lower carb/sort of lazy & dirty Keto diet granted these aren't "Keto friendly" because of the oats and sugar, you can easily swap the oats for hemp hearts and the sugar for a keto sweetner, or if that's not important to you, then you could swap the sweetener for pure maple syrup as it is lower on the glycemic index. We also call these Oatmeal dark chocolate peanut butter scotchies but we like the name of power cookies instead. You can find low carb/sugar free chocolate chips or use carob if you wish. The macros for these uses standard chips because that's what we had on hand and what were trying to use up. Although they don't contain dried fruits like other power cookies do. Our goal is to be lower carb/lazy&dirty Keto/higher fiber/with balanced fats/protein than traditional and keep it gluten free. That's quite the tricky thing to do. My kids and husband aren't on my diet and still have "regular homemade treats" even though I eat alot more veggies and way less carbs.
Can't blame them to want to eat these as a pre-preschool breakfast cookie or even a pre-workout snack!
If your gluten free these are for you but you want to check the source of your oats, some brands are verified gluten free, others are not! Also if you use an egg substitute these are Vegan. Don't be afraid to swap out the Crisco for all coconut or switch it to butter or even Lard, do whatever works for You and your family eating them.
