This is a gluten free version of Swedish pancakes which are like crepes. They are very thin. Can be served with butter and syrup of also fresh strawberries or any fruit and whipped cream or a lighter version like cool whip.

This baked oatmeal can be made ahead for quick take along breakfast OR a dessert. Just warm up or eat cold. Can use other berries or apples. Calorie count won't change much.

Found a similar recipe, but it called for flour and sugar and I don't do either of those, so I thought I would try my hand at removing those ingredients and I thought it came out pretty good.
