This is a great alternative to mayo based chicken salad! Alter ingredients to your taste (I like extra pepper).
Passed onto me by my nutritionist-- An easy-to-make all-natural dessert that's rich and satisfying in small amounts. My husband has 13 major food allergies and this is one of the few desserts he can have. Sugar content is low, but because of its high fat content this is best for special occasions.

I had a ton of asparagus from .99 a lb deals and so I developed this recipe to use of some of the bounty.
I used up my baby rice cereal in place of a flour,
home made and healthy cookies for my grandson,
more sugar than I used in his mommy's 30yrs ago, but I have to get him weaned from the processed stuff he is used to.
Throw in whatever you've got. The great taste comes from throwing in a grapefruit and an orange - peel and all. Easily fat free, gluten free, and totally yummy. It's even better the next day, when the citrus and carrot cake flavours have had a chance to mingle.
