This is a quick and easy week night curry. The recipe calls for .5 cups of coconut milk, but I use 1 cup of lite coconut milk. Add any additional seasonings to taste.
These scrambled eggs can be eaten with either roti (Indian fresh tortilla bread) or toasted wheat bread or pita bread in breakfast.
It is Indian chicken dish with grilled chicken breast in a tomato and cream sauce with Indian seasoning.
Modified by using Curry powder instead of Garam masala powder, Curry leaves and Tumeric powder, because I didn't have those ingredients, but I'm sure it would have been better if I had mixed my own.
