This is my favorite dish I've made so far. You can use whatever veggies you have available. The recipe includes my favorites. Any cooking wine will do, I also sub italian seasoning if I don't have fresh basil. Sometimes, I serve this over roated red potatoes instead of pasta. If you cut out the sausage, the dish will have a little over 300 calories per serving. Yum! I hope you enjoy as mush as I do!

I am experimenting with using whole fat evaporated milk instead of the heavy whipping cream as called for in the original recipe. I will post how it turns out after dinner tonight. Fingers crossed its yummy!

I know this is a weird recipe (light on cheese and sauce, heavy on beans) but I love it this way.
Pasta salad is made so many different ways. You can switch it up by changing the cheese, meat, olives and/or dressing. You can add green/red peppers or anything else you like.
Think crust Boboli pizza spiced up with some sweet honey barbe que sauce.
I roast the veggies while the pasta cooks to minimize the cook time.
I like more sauce than the recipe calls for.
