A meal I am creating for my 3 year old grandson who was just been diagnosed with Juvinile Diabetes. Hard to get enough good carbs in such a little guy.
In a large saucepan, cook and stir the onioin, celery, sweet pepper, carrot, and parsley in the olive oil until onion is tender. Add the undrained tomatoes, sauce, and rest of seasonings. Reduce heat and simmer for 30-60 minutes. Tangy, and sweet sauce.....SUPER DELICIOUS! I serve it with whole wheat linguine noodles..... nutrition info is for the sauce only. Double the recipe and freeze some!

Just something I threw together that ended up being super yummy! shredded chicken, fresh spinach, mushrooms, garlic a little cheese rolled up in a half piece of lasagna and baked, with a small spoonful of spaghetti sauce on top makes this a very yummy dish, filling and low in calories! My family loved it!
