I came up with this recipe while traveling for work. I try to eat well while on the road but the kitchens available make cooking a bit of a challenge. This was super easy to make with limited cooking tools and only took 15 minutes total to make. I went with turkey tenderloin (breast) over chicken because it was cheaper but you could go either way. Take out the meat all together and it still is a flavorful vegetarian meal or side dish.
Mushrooms are also a great addition to this dish and/or diced onions (carmelized).

This is a group favorite for dinners and pot-lucks. It takes some time to make but is totally worth it.
Since there are 2 crusts in the brand I buy I usually make both at the same time leaving leftovers for another day.
I hate pasta. Sadly, my husband could live off it. This recipe was born out of my need to make a very hearty pasta sauce so that I would have plenty to eat even without wanting to eat a lot of noodles--plain jarred marinara sauce just wasn't cutting it, though I'm lazy so I use it for my base. It's been a hit among my friends and extended family, as well as becoming my husband's very favorite recipe. I still don't like pasta, but even I think this sauce is pretty darn good!
If you like Olive Garden's "Pasta e Fagioli" soup, then you'll enjoy this lightened version. Very filling & easy to prepare. You'll enjoy this slightly spicy soup -- great for the whole family.
This is a quick fix for dinner: hearty & truly tasty. I suggest 2 servings (1 cup) atop whole wheat pasta (approx. 28g/1 oz = 0.5 c. cooked pasta).
Serve with a side salad of naked greens with low-cal balsamic dressing.

Cleanse the palate and take away the desire for more pasta with cantaloupe - a 170 gram (~1/8 of a melon) does the trick for only 60 calories! and no one leaves the table hungry!

I usually add extra basil and garlic to the tomato mixture and extra mushrooms. You can never have too many mushrooms:)
