This is a great way to use cooked chicken breast and healthy version of my favorite pizza - Thai Pie. I used english muffins, but you can use a whole wheat pita if you'd prefer. Both muffins with a salad make a filling (and tasty) meal that's quick and easy to make.
This is a recipe from "The Sneaky Chef" cookbook. It adds a carrot and sweet potato puree to it along with one slice of american cheese and cuts the butter in half. You can't taste, smell, feel or see the difference, but it is much healthier! My kids love it, and it makes me not feel so guilty using boxed mac-n-cheese.
You can add peppers to this if you like...we don't. Good basic chili. Not too spicy. Kids like it. Apparantly this was Pocahantas's recipe (I would not put it into a history book though).

This one pot meal is a favorite of my children when they were much younger (now 20, 25 yrs old) . It can be made in so many different varieties.....I substituted what I had on hand (sweet peas, baby carrots)...when this dish is normally made I use broccoli, corn, and I use fresh carrots that I slice myself...my now young adult children, substitute with ground beef, chicken and/or turkey...you can taylor it to your families likes.
