I had a ton of tomatoes and bought salmon on sale. Having never made salmon before I surfed the internet looking for an easy salmon recipe that had tomatoes.. and that looked healthy and this is what I found on Simply Recipes... I made it that night and it was delicious! And I just had to share it with others! Enjoy!
This is my version of Tuna Salad.. I try to keep low in carbs and saturated fat.
I don't always use 2 whole eggs.. it's more like 1 and 1/2 eggs
this is the next best thing to a bake apple pie, without all the carbs, sugars, and FAT. and a perfect way to spoil yourself without breaking the calorie bank

Tuna and Egg on a bed of lettuce with a light and refreshing dressing. Very simple salad, great source of protein!
Chopped walnuts replace the bread crumbs in this recipe & pasta sauce replaces the eggs. (Lower carbs, lower fat)
I put this recipe together after I had Lap Band surgery to keep it low carb and low cal.
The original recipes calls for pancetta, I never use pancetta in this recipe and I don't miss it or the added calories. I did didnt have green beasn this time and rthose i do miss. As for the pasta if i have leftover rice or pasta I will throw a little of that in it. I never put pasta in my soup because it tends to soak up all the liquid so I make pasta on the side.
This is a REALLY easy take on the classic egg white omelette. It's a little less sophisticated, but super easy to make AND eat. Plus is puts all the flavors together for a delicious dish. And it's REALLY high in protein!!
