Oven Baked Chicken Fajitas
This is a recipe I found recently on my newest obsession, Pinterest. I modified it a little; adding more garlic powder, cumin and chili powder than what the recipe calls for (I didn't think teaspoons were enough for my tastes - thankfully, I was right), and omitting the salt it called for as I don't add salt to anything I cook. Also, I added an extra bell pepper, because they are one of my favorite veggies. Also, I added half a can of sweet corn, which the original recipe didn't call for. ed-chicken-fajitas-recipe.html) Just FYI, the nutrional info has 8 low carb whole wheat tortillas added to it (to equal out to 1 tortilla per serving), however you could also serve this on its own, or over some long-grain, brown rice...I bet it would be delicious. Also, I personally did not use sour cream (mostly because I didn't have any when I made this!) but if you used Fat Free Sour Cream, it wouldn't add too much to the recipe. If you omitted cheese as well, you could reduce the fat and calories of this meal further...however, in my world, there's no such thing as no dairy with dinner ;)
